My middle son loves having jam on a toast and since the selection in the grocery stores usually are sugar laid we opted for making our own. The strawberry jam is very easy to make. We buy organic strawberries at the local Farmers’ market and pick the lemons in our garden. Since we keep the sugar minimum we freeze the jars and just keep one fresh in the fridge for us to enjoy.
Ingredients
- 800 g organic strawberries
- 1 cup unrefined cane sugar
- 3/4 tbs finely grated lemon zest
- 3 tbsp squeezed fresh lemon juce
Directions
- Wash the strawberries. Remove the green and slice them
- Bring to boil with the sugar in a saucepan. Simmer on low heat until thickened.
- Add the lemon zest and juice.
- Mix in a blender until silky smooth.
- Transfer to jars that have been disinfected at 100°C for 20 minutes.
